Today I am taking you along on my meal prep journey this week! I typically do not meal prep during the summer as much, but I know I should! If you’re like me and always on the go, you know how it easy it is to get caught up in the busyness of life and suddenly you’re starving! When this happens I typically end up grabbing something from a fast food restaurant. While I always make healthy choices, whether it’s a salad or green smoothie, the cost really adds up! I also know I could max out the nutritional value of my meals if I just prepped them ahead of time.

I started out by choosing the protein portion of my meals. Today I used chicken breast and tilapia. Next, I put them on aluminum foil and used the spices pictured below to season my protein . I also added fresh rosemary & garlic. Finally, I wrapped them up and put the protein in the oven on 375 for 30 min. (Chicken may need an extra 15 min if you’re cooking from frozen.)
Now, if you’re like me you probably crave something starchy to go along with your meals. While shopping around for a healthy, nutritious starch I came upon the two quinoa blends below! The directions to prepare them are on the back of the package.
Eat all the Veggies!!
For me this is the fun part! Last week I went on vacation to the Outer Banks Beach, and I definitely over indulged in some not so healthy foods. However, I believe in balance. That being said, I wanted to choose vegetables that are de-bloating and de-toxifying! Soooo, I’m using asparagus and zucchini.
Sautee the veggies in coconut oil, until they are softened to your liking!
The Final Result!
Spoon all of your prepared food into your meal prep containers and BOOM! You are all done! Now I have all my lunches prepared for the week and there is no reason that I should reach for something unhealthy!
